Apart from dynamat what other options are there for lining the inside roof, the old bitumised cardboard on mine has seen better days.

Stinky I did think of carpet underlay but the stuff I've looked at is too thick to fit between the hoodlining bows & roof.

As has already been suggested it probably serves a combination of purposes.
To stop the roof metal drumming (more so a problem in sedans and wagons than utes because of the roof area ).
Some heat insulation.
And to assist in stopping hood bows from touching the roof and causing an annoying vibration which would drive you mad on a long haul.

I also found car stereo insulation carpet, may be another alternative. It's used to go around those external speaker boom boxes, and can be glued to the roof also.
I believed it was for both heat and sound insulation.
