They are acrylic plastic knobs bought from Nekro's link.
You can also make them yourself if you have the time.

austmod buy another dash usually can pick them up for a reasonable price, paint it up and just swap it over should take 15mins tops

Yes, I have done it in my old torana, make sure you sheild any connectors and keep the speedo cable out of the way of anything. Even better, remove the speedo from the dash and fit it until you are ready to do it, so at least you know how fast you are going.
