When I drove mine from bris to Perth, I didn't carry much going of memory I had the following in the boot:

Top and bottom radiator hoses
Oil (I used about 5L)
Coolant
Water
Spare belts
Points and condesor
Fuses
Hose clamps (used them to hold my exhaust in place after I snapped a hanger)
Assortment of tools, incl some electrical gear

That's about it...

Before the drive I made sure everything was in good nic or replaced:
Wheel bearings
Bushes
Water pump
Radiator
New oils and fluids right through
Everything greased up etc

That's a good point. I wonder how many people with FKs follow the lubrication & greasing requirements, or even own a grease gun

On a long trip:
A spare set of point's, a condensor, a torch, a hacksaw blade and screwdriver for setting em before i switched to a blue motor dissy, plus a few spark plug's.
Eleco tape, wire stripping pliers, extra fuses and wire terminals and spare wire should my ignition switch or wireing loom short out. : It has happened.
Extra fuel line, extra clamps, fibre speed tape, extra needle and seat, extra fuel pump plungers for the X2 carbs and a spare carby kit.
A spare fanbelt and a good used water pump get's thrown in too plus the jump start cables

A set of front wheel bearings, a few split pin's of various sizes, a top and bottom HR control arm bush, a couple of imperial bolts with nuts, one set of uni's, a spare uni U bolt with split washers and nuts, My ancient mini grease gun (just push the end in), a spare axle with a good greased up bearing. Extra motor oil, gear oil, oil pumper, brake fluid, anti freeze and anti boil fluid. Water and a full gerrycan full of fuel plus spout.

a short trip for me is a 500klm round trip, then the tools are, a few screwdrivers, wire, pliers, a pair of vice grips, eleco tape, a set of uni's and brakefluid plus the spare, floorjack and a wheelbrace. Since i drive it daily plus do all of the mechanical and panelbeating repairs it's kept in tip top fill it up and go (anywhere) condition.

The cold chisel I have has a big rubber flap on the end so you can really flog it and you don't hit your hand, but saying that, I'm by no means the timing gear Guru. Up here in Sunnyland, that would be Tim. Somewhere in the back of Fis EK there is a dizzy, fuel pump, RB 310 Lucas regulator, there was a generator (now only brushes I think) fuel pump, water pump and a headlight switch I think. No Timing Gear as we have a steel one. If you do have to change one, check the hole in the oiler. I recklessly drilled this out to 1/8 on Petes EJ (did the same to Fi's) I don't know what this does, I just like the idea! Any oil pressure lost would be picked up I think, by the mandatory "Self Tapper in the Rocker Gear" that I always do as well. I'm not an engine builder with an understanding of oil galleries or anything, but Iv'e had Squeaky rockers before, and this has always worked. Getting back to the list, just bring the normal stuff that comes to mind.
